How to make Chilaquiles

Hello everyone! Today I am providing you with a recipe on how to make Chilaquiles!

Chilaquiles are a traditional Mexican dish which is normally eaten for breakfast, but I personally love and enjoy eating them any time of the day :) This dish consists of corn tortillas cut into quarters, which are then slightly fried and topped with salsa. You can also add additional toppings including beans, cheese, avocado, onions, radishes, etc…


You will need the following:

  • 15 Corn tortillas

  • Oil

  • 5 Roma tomatoes

  • Jalapeños (I use 1)

  • Chile de árbol (I use 2, these are super spicy!)

  • ¼ of an onion (can be diced or cut into moons)

  • 2 garlic cloves

  • ¼ tsp whole cumin

  • ¼ tsp black pepper

  • Salt

  • 1 tablespoon chicken bouillon (or choice of flavoring)


Steps:

1. Begin by cutting your corn tortillas into quarters/triangles.



2. In a frying pan place enough oil to cover your tortillas and begin frying them. Your tortillas are done when they are a golden color.



3. We can now begin making our salsa. You will roast your tomatoes, jalapeño, chile de árbol and garlic ( I usually do this on a comal. Any iron griddle should work). My comal wasn’t big enough so I roasted my jalapeño, Chile de árbol and garlic after the tomatoes.



4. Place your roasted tomatoes, jalapeño, chile de árbol, garlic, in a blender along with the cumin, black pepper, chicken bouillon and salt. Blend all of this together until you have a smooth salsa.



5. In a small frying pan add about 2 tablespoons of oil and begin frying your onions for about 1-2 minutes. Then add your salsa. Let this simmer and add any salt if necessary.



6. After a couple minutes, add your fried tortilla chips to your salsa and begin mixing. Make sure all your tortilla chips are coated with the salsa.



7. Add your toppings and serve! (The final image is similar to the final result, though this image is from google due to not taking a final picture!)
